Heart warming cabbage soup with chorizo

I made this soup on a rainy August day when the autumn was in the air. I needed something "vegetable-y" but with a warming kick and a quick look around in the fridge gave me an idea for this. The amount of each ingredient is entirely up to you!




  • 1 cabbage
  • 1 white onion
  • chorizo
  • 2 garlic cloves
  • 1 tsp fennel seeds
  • 1 tsp oregano
  • 1 tsp paprika
  • a pinch of dried chilli flakes or fresh chilli
  • salt
  • pepper
  • olive oil
  • 1 litre of chicken stock - I had a homemade one from Sunday roast chicken


1. Fry the onion, garlic and chorizo until it lets the colour out.

2. Add the shredded cabbage and fry for a couple of minutes.

3. Add fennel seeds, oregano, paprika, chilli.

4. Add the stock.

5. Simmer until the cabbage is soft.

6. Blend and season to taste.
